Happy Holidays/Felices fiestas!

The holidays are already around the corner: Christmas, Hanukkah and New Year. I still can’t believe the year went by so fast!
What a better way to celebrate these Holidays than by cooking a rich meal at home.
I have recently bought an iron pot from Le Creuset. It is so beautiful that I can not stop staring at her. My husband (obviously) is not happy when I buy kitchen items. The size of my kitchen is standard, just like the rest of the kitchens of large American cities: “very tiny”

The point is that I liked it so much that I had to buy it, despite having no space in my small kitchen. But friends, you do understand me, right? I could not say no to this beauty.
This pot is one of those utensils you could die for purchasing but, because it is a bit expensive, you decide to buy in “the near future”.
Le Creuset is a very popular international brand, of French origin. It features very high quality and sophisticated range of designs and colors.

Se acercan las fiestas: Navidad, Hanukkah y Año Nuevo. Todavía no puedo creer que se pasó tan rápido el año.
Y que mejor forma para celebrar las fiestas que cocinando algún sabroso plato casero.
Hace poco me he adquirido una olla de hierro de Le Creuset. A mi marido (obviamente) no le divierte que compre artículos de cocina. El tamaño de mi cocina es estándar, igualita al resto de las cocinas de las grandes ciudades Americanas : o sea ¨diminuta¨.

Pero amigas/os: Ustedes me comprenden, verdad? No podía decirle que no a esta olla violeta valuada en más de 254 dólares. Es realmente una joya. Se trata de uno de esos utensillos que mueres por adquirir pero, al ser costosos, decides postergar y comprar más adelante.
Le Creuset es una marca de origen Frances y muy popular internacionalmente. Cuenta con alta calidad y una sofisticada variedad de diseños y colores.

Que mejor manera de conmemorar el Mes de la Hispanidad, que disfrutando de un sabroso flancito. Esta es una clásica receta familiar de flan con dulce de leche y crema Chantilly, aunque aggiornada para deleitarte en estos tiempos modernos.

Cuando se lo acompaña de crema chantilly y dulce de leche, el flan es llamado “mixto”.
Los recuerdos muchas veces nos inspiran. Para celebrar el Mes de la Hispanidad, me he basado en dos momentos sublimes que guardo en la memoria: los alfajores que saboreaba durante mi infancia y el buen vino compartido en las reuniones con amigos.

En Argentina, existen alfajores de todo tipo. Se pueden encontrar los alfajores regionales (santafecinos, los cordobeces, los marplatenses) y los comerciales.
Otro gran inspirador es el vino. En Argentina, come en toda lationeamerica, es el mejor acompañante para los asados (barbacoa). Existen distintos varietales, aunque el Malbec se ha transformado en el icono vitivinicola argentino.

En mi receta he utilizado un toque de Malbec. La presentación de este postre es en forma de alfajor.
Por eso lo he denominado “Alfajor de flan con Malbec”.

Espero que lo disfruten !

Receta:
250 grs. azúcar
740 ml Leche entera
1 chucharita de esencia de vainilla
1 1/2 cucharada sopera de vino Malbec
250 grs. de azúcar
7 huevos
1 yema de huevo
Dulce de leche (a gusto)
Crema Chantilly (a gusto)
Decoración de chocolate o caramelo

Preparación:
Caramelo
1.Prepara caramelo con 250 grs. de azúcar y un poquito de agua en una cacerola a fuego lento.
2. Al obtener un color amarronado, extrae el caramelo del fuego
3.Coloca el caramelo en ramekins

Flan
1. Mezcla la leche, la vainilla, el vino Malbec y la mitad del azúcar en una cacerola y llévalos a hervor en baño maría
2.Mezcla los huevos y la yema con la otra mitad del azúcar
3.Incorpora la mezclas del paso 2 en la del paso 1
4.Pásalo por un colador/chino
4.Coloca la preparación en los ramekins
5.Ponlo a fuego suave (300˚ F) por 35 a 40 minutos, o hasta que el postre tome consistencia
6.Deja enfriar y coloca en el refrigerador (si es posible durante toda la noche)
7.Desmolda el flan pasando un cuchillo por los costados del molde.
8. Inviértelo sobre una bandeja
9. Coloca un flan como base del alfajor, añade una capa de dulce de leche y cúbrelo con otra tapa de flan.
10. Acompañalo con crema chantilly y alguna decoración de chocolate o caramelo

Continuando con mi recorrido... 
Hoy he decidido continuar mi travesía por la intensa y rica cultura culinaria del Perú. Con mucho agrado he descubierto Amaru: Un pisco bar dedicado a tragos y pequeños platillos (o tapas). Amaru es el nuevo bar de la cadena Pio Pio que ya cuenta con 8 restaurantes.
Esta vez me pareció divertido entrar en la cocina y ver lo que sucede detrás del escenario.
Tuve la suerte de encontrar un restaurant que no sólo ofrece platillos fabulosos sino que, además, cuentan con gente super buena onda que me abrió las puertas y me hizo sentir una integrante más del equipo.
He cocinado con el Chef Charles Thomson. Aquí puedes ver una foto atestiguando la grata experiencia.

Además, han compartido con LFLs la receta de la salsa wanton! Gracias Amaru por vuestra generosidad !

Ingredientes:
- 1 taza de puré de frutos de la pasión
- 1 taza de puré de mango
- 1 taza de miel de abeja
- 1 cucharada de jengibre
- 1 cucharadita de ajo

Procedmiento:
1. Colóca en una olla todos los ingredientes y deja reducir por 30 minutos
2. Pásalo por un colador
3. Déjalo enfriar
4. Decóralo con sésamo

A continuación podrán también ver las fotos de estos deliciosos platillos.

Lo primero que hice fue beber un cocktail ¨Pisco Tuna¨ de fruta de cactus. El trago es delicioso y tiene una presentación bien chic.

Luego de cocinar, realizamos una degustación de todos los platillos y realmente estaban todos bien sabrosos.

Ceviche de camarones con salsita de mango, piña, jengibre, y jugo de naranja

La movida (como decimos en Argentina para referirnos a la hora en que la gente empieza a llegar al baile) comienza luego de las 5 pm. Me invitaron  quedarme para conocerlo de noche. La oferta era tentadora pero, luego de la maternidad, los planes de último momento son más dificiles de organizar. Pero volveré amigos! Gracias por abrirme las puertas de Amaru y por esta maravillosa tarde!

Continuing my journey...
Today, I decided to continue my journey through the intense and rich culinary culture of Peru. With great pleasure I discovered Amaru: a pisco bar dedicated to drinks and small plates (or tapas). Amaru is the new bar from the Pio Pio chain, which already has eight restaurants.

This time, instead of dining, I found it fun to enter the kitchen and see what happens behind the scenes. I was lucky to find a restaurant that offers not only great dishes, but one that also has super cool people who opened the doors and made me feel like a member of the team.
To top off my experience, I cooked with Chef Charles Thomson! Here you can see a photo testifying to this awe-inspiring experience:

They have also shared with the LFLs a wanton sauce recipe. Amaru, thanks for your generosity! Here goes:


Ingredients:
- 1 cup passion fruit puree
- 1 cup mango puree
- 1 cup honey
- 1 tablespoon ginger
- 1 teaspoon garlic

Procedure:
1. Mix all ingredients, place them in a pot and let the ingredients reduce, about   
    30 minutes
2. Pass the mixture through a strainer 
3. Let the sauce cool
4. Garnish with sesame

You can look at the beautiful dishes, all delicious. Try the recipe to taste for yourself!

The first thing I did was drink a Pisco Cocktail: “Pisco Tuna” with cactus fruit. The drink is delicious and has a chic presentation.

After cooking, we conducted a tasting of all dishes. They were enjoyed by all  and participants found them to be “really” tasty.

On a final note for this entry, I have to thank Amaru again for this special day!
“La movida” (as we say in Argentina to refer to the time that people start to arrive at the party). begins after 5 pm. The even invited me to stay and experience more of the nightlife and the offer was tempting. However, as many mothers know, last minute plans are difficult to organize. But I am grateful for my day of cooking and eating with good people.
