LATISM LATINA BLOGGER RETREAT IN Washigton DC and The White House

I have recently spent some wonderful days with a group of bloggers selected to attend the first LATISM retreat in Washington, DC. I am very grateful for having been selected as on of the 70 Topblogueras (based on influence, traffic and content quality). This unforgettable event also included a meeting at the White House.

I wanted to thank the selection committee and everyone at LATISM, who allowed this historic event to take place.

I must confess I would have never believed that my culinary journey would eventually lead me to the White House. I have started my blog to express my passion for the cuisine world and to teach our culture, tradition and history through recipes, ingredients and flavors.

The fact that I was invited to the White House made me think of my experiences as an immigrant over the years. The early times were quite hard for me.
We came to this land 7 years ago on working visa (H1), with great enthusiasm, passion and eagerness to find new horizons and opportunities.

And, trust me, it hasn´t been easy to get a resident visa (green card). But with effort, honesty and perseverance it is always possible to make it.

The White House has opened its doors to us and has made me feel I was at home.



We were hosted by a panel of people where everyone spoke Spanish. With all honesty, I have felt a huge commitment towards the Latino community.

Several important issues and topics were addressed, including education, health and immigration.

What I wanted to stress the most is what concerns LatinFoodLovers and its followers. In particular, the Administration’s program against hunger and obesity, which was presented by Lisa Pino.

There are bad news and good ones.

The bad news related to ever more alarming statistics.

Childhood obesity in the Hispanic population is growing faster than other segments of the population. Almost two in five Hispanic children between the ages of 2-19, are overweight or obese. Obesity in preschool children is higher than that found in children of similar age African-American and Anglo-Saxon.

40% of Latino children are either obese or overweight and one third of the population of Latino families are threatened by hunger.

The good news is that the Administration is committed to combat these problems and there are different food and nutrition education programs.

Here we enumerate some of them, which can found online.

-SNAP (Supplemental Nutrition Assistance Program) The program is available to nearly anyone with little income and few resources who qualifies. Participating households receive monthly benefit allotments in the form of electronic debit cards.

-The NSLP (National School Lunch Program) provides children with nutritionally balanced lunches free or at low cost, every day of the school calendar. The low cost or free lunches are based on the income of each family.

 -Food Program or CACFP (-Food Program Day Care for Children and Adults) Helps child care providers and adult and after-school programs, serve refreshments (snacks) and healthy meals as a regular part of daily care.

-The SFSP (Summer Food Service Program Summer) provides meals to students during the vacation months when they have no access to lunch or breakfast at school.

-WIC (Special Supplemental Nutrition Program for Women, Infants and Children)
Provides a voucher or coupon. It is used to buy food that will help you and their children to eat healthy.

- WIC FMNP (WIC Program Farmers' Market)
The program provides coupons that you can use at farmers markets or fruit stands.

He pasado unos días maravillosos junto a un grupo de  blogueras seleccionadas para asistir al primer Latism reatreat en Washigton, DC.  Estoy muy agradecida  por haber sido incluida dentro de las 70 Top Blogueras del país (en base a mayor  influencia, tráfico y calidad de contenido). Este inolvidable evento incluyó, además, una reunión en la Casa Blanca.

Les quiero agradecer al comité seleccionador y a todo el equipo de Latism, quienes permitieron que este histórico evento se lleve acabo.

Debo confesarles que jamás hubiera creído que este viaje culinario me hubiera llevado a la Casa Blanca. He iniciado mi viaje gastronómico para poder expresar mi pasión por el mundo de la cocina y para enseñar nuestra cultura, tradición e historia a través de recetas, ingredientes y  sabores.

El hecho de haber sido invitada a la Casa Blanca me ha hecho flexionar en mi travesía durante todos estos años. Los primeros años han sido bien duros para mi.
Es que vinimos con visa de trabajo (H1) tan sólo hace 7 años, con mucha ilusión, pasión y con ganas de encontrar nuevas oportunidades.

Y creánme que no ha sido fácil llegar a obtener una visa de residente (greencard).  Pero con esfuerzo,  honestidad y perseverancia se PUEDE.

La Casa Blanca me ha abierto las puertas y me ha hecho sentir que estoy en mi casa.


Nos ha recibido con un panel de personas en donde todos hablaban español. Sinceramente, he sentido un enorme compromiso con la comunidad latina.

Se abordaron temas como educación, salud e inmigración.

Lo que más quiero destacar, siendo que es lo que le concierne  LatinFoodLovers y sus seguidores, es el programa contra el hambre y la obesidad, que presentó Lisa Pino.

Existen malas y buenas noticias.

Las malas noticias son fundamentalmente basadas en las alarmantes estadísiticas.

La obesidad infantil en la población hispana está aumentando más rápido que en los otros segmentos de la población. Casi dos de cada cinco niños hispanos de entre 2 y 19 años, tienen sobrepeso o son obesos. La obesidad en los niños hispanos en edad preescolar es más alta que la de niños de la misma edad de origen afro-americano o caucasico.

El 40 % de los niños latinos  tienen  obesidad o tienen sobrepeso y un tercio de la población de familias latinas  están amenazadas de hambre.

La buena noticia es que existen soluciones en marcha.  La Administración está comprometida en combatirlo a través de diferentes programas de alimentos y de educación sobre nutrición.

Aquí les enumero alguno de ellos que pueden encontrar online.

- SNAP (Supplemental Nutrition Assistance Program) que está disponible para personas de bajos ingresos con el fin de  facilitar alimentos saludables. Ofrece ayuda mensual para la compra de alimentos en tiendas mediante una tarjeta de transferencia electronica de beneficios, que funciona como una tarjeta de débito.

-El NSLP (Programa Nacional de Alimentos Escolares) ofrece a los niños almuerzos nutricionalmente balanceados -gratuitos o a bajo costo- cada día del calendario escolar. Los almuerzos gratuitos o a bajo costo se basan en los ingresos de cada familia.

 -El Programa de Alimentos o CACFP (Programa de Alimentos de Cuidado Diurno para Niños y Adultos) ayuda a los proveedores de cuidado infantil y de adultos, y a programas extraescolares, a servir refrigerios (meriendas) y comidas saludables como parte regular de su cuidado diario.

-El SFSP (Programa de Servicio de Alimentos de Verano) ofrece comidas a los alumnos durante los meses de vacaciones, cuando no tienen acceso a los
almuerzos ni desayunos en la escuela.

-WIC (Programa Especial de Nutrición Suplementaria  para Mujeres, Bebés y Niños)
ofrece un vale o cupón. Éste se utiliza para comprar alimentos que ayudarán a madres e hijos a comer de manera saludable.

- WIC FMNP  (Programa del WIC en Mercados Granjeros)
El programa da cupones que pueden utilizarse en los mercados  granja o en puestos de frutas.

Happy mother´s day! Pressure cooker giveaway!

IMUSA, a brand of utensils designed especially around the needs of the Latino kitchen, has surprised me with an incredible gift.

The other day when I have arrived home, I saw a giant box in the mail. Can you believe they sent me a gift, a digital electric pressure cooker? And just in time for Mother's Day!

Not only that, they have also sent an extra one to give away to a lucky reader of Latin Food Lovers.

I love to buy any kitchen utensils that helps me cook better (and faster!). Doesn’t it look just beautiful? Really, I do not know yet where will I keep it. I have a tiny kitchen and need to find a place soon before my husband decides to move!

I must admit I typically use a covered casserole or pan, the way my grandmother taught me.
When cooking large pieces of meat, I use the braising technique.  First, I brown the meat for a few minutes in fat (to increment the flavor) and then proceed to cook over low heat on covered containers (to tenderize the meat). You can read a whole explanation of this process in the book: “On Food and cooking”, by food scientist Harold Mc Gee)

After this receiving the IMUSA pressure cooker acquisition I am eager to try my recipes using all of its features.

It is not only a pressure cooker, it also works as a steamer and digital rice cooker. It also has a function setting for browning and can keep preparations hot.

One of the main reasons why I want to try it is because I feel good about programming for a specific time. That way we can always have the food ready when visits arrive!

IMUSA, una marca de utensillos pensada especialmente para las necesidades de la cocina Latina me ha sorprendido con un increíble regalo.

Es que cuando entre a casa y vi en el correo una caja gigante, realmente me sorprendí. ¿Puedes creer que me han enviado de regalo una olla digital eléctrica a presión? Y justo a tiempo para el día de la madre!

Y no sólo eso, sino que además me darán una igualita a la mia para  regalársela a una afortunada lectora de Latin Food Lovers.

Creo que quienes amamos la cocina nos gustaría contar con utensillos que nos ayuden a preparar platos a diario (y más rápido!). ¿Mirá que cosa más linda? Aún no he decidido donde la voy a guardar en mi diminuta cocina. Tengo que encontrarle un encondite pronto antes que mi esposo decida mudarse!

Les confieso que suelo utilizar cazuelas a prueba de llama o una cacerola tapada tal como hacían nuestras abuelitas.
Cuando necesito cocinar piezas grandes de carne, empleo la técnica de estofar o “braiser”. Primero doro o marco la carne por unos minutos en materia grasa (para darle más sabor) y luego las cocino a fuego lento en un recipiente tapado, para así lograr una carne más tierna. Puedes leer la explicación extendida en es este famoso libro: On Food and cooking, food scientist Harold Mc Gee)

Luego de esta nueva adquisición,  me han dado muchas ganas de probar mis recetas,  aprovechando todas las funciones que posee este dispositivo.

Es que no sólo es una olla a presión, sino que además es una olla de vapor y arrocera digital. Además, tiene una función para dorar la pieza en material grasa y, a la vez, puede mantener caliente las preparaciones.

Una de las principales razones por lo que quiero probarla es porque me parece excelente que se pueda programar para una hora determinada en la que debemos tener la comida lista y me encanta el hecho de que se ahorre tiempo de cocción.

Happy Cinco de Mayo!


In order to enjoy a wonderful Cinco de Mayo with friends and family, I have prepared a very light and refreshing margarita.
Actually, I'm not a big fan of high-alcohol content drinks. Many times these are much more  ¨dangerous¨  because they seem more like a juice where the alcohol content is barely felt, but ultimately they can leave us a little dizzy. Tip: Do not thinkit is simply water!

To make a good passion-fruit margarita, I have added a bit at the time to find the optimum point. If you are a fan of  drinks in which alcohol is more intense, and you like so much tequila that you can drink it alone, I recommend that you increase the amount of tequila for this drink. Otherwise you will be disappointed.

The idea that Cinco de Mayo pass without a shot seemed somewhat boring. The May 5th is a very important date in Mexican history. This recipe is super simple and refreshing for you to enjoy during the weekend.

Margarita Passion Fruit:

ingredients
75 ml of tequila
250 ml ice bucking
100 grams passion fruit puree or passion fruit juice
1 tablespoon lime
50 grams of sugar
50 ml of mineral water

Procedure


1. Mix double boiler passion fruit puree, water, sugar and lime until sugar dissolves and the mixture becomes homogeneous.
2. In a blender, place ice, tequila and the mixture of point 1
3. Serve in cups and decorate with a slice of lemon or lime

Feliz Cinco de Mayo!



Para poder difrutar de un Cinco de Mayo con amigos y en familia,  he preparado una  margarita bastante liviana y refrescante.  

La verdad es que no soy fanática de los tragos con alta graduación alcohólica. Me gustan los tragos más bien suaves. Muchas veces estos tragos son más  ¨peligrosos¨ porque parecen más bien un jugo en el cual el contenido alcoholico casi no se siente; pero a la larga nos pueden dejar un tanto mareados. Consejo: No creas que es agua!


Para confeccionar este margarita de maracuyá fui agregando tequila de a poquito hasta encontrar el punto óptimo. Si eres fanática/o de los tragos donde el alcohol es más bien intenso y te gusta tanto el tequila que te lo puedes tomar más bien sólo, te recomiendo que le incrementes la cantidad de tequila porque sino este trago te decepcionará.

La idea de pasar el Cinco de Mayo sin algún trago me parecío un tanto aburrida. El cinco de Mayo es una fecha muy importante en la historia Mexicana. Esta receta es muy super sencilla y refrescante para que disfrutes durante el fin de semana.

Margarita de maracuyá:

Ingredientes
75 ml de tequila
250 ml Hielo trozado
100 grs Puré de maracuyá o jugo de maracuyá
1 cuchara sopera de jugo de lima
50 grs de azúcar
50 ml de agua mineral

Procedimiento

1.     Coloca a baño maría el puré de maracuyá, el agua, el azúcar y la lima hasta que el azúcar se disuelva y la mezcla sea homogenea.
2.     Coloca en una licuadora el hielo, la tequila y la mezcla del punto 1
3.     Sirve el trago en vasitos y decóralo con una rodaja de limón o lima

Great lunch with Chef Aaron Sanchez!

Quiero agradecer al Chef Aaron Sanchez por haberme invitado a su restaurant Centrico, ubicado en pleno SOHO. Han realizado un almuerzo especial donde invitaron a diferentes medios y blogueros para presentar su recetario ¨Comer juntos¨, el cual fue preparado en conjunto con “Sierra Mist Natural”.

Si sigues mi recorrido de restaurants, no te preocupes,  pronto volveré al Perú. Dado que me han invitado especialmente aquí, mi recorrido se ha alterado tan sólo un poquito. Podría decirte que el Che se salteo un par de países  y vino a probar deliciosos platos inspirados en México!

If you continue my tour of restaurants, in fact I was still walking through Peru. However, since I have been invited to this cool restaurant in Soho, my journey has been altered just a bit. Just think of it as Che skipped a couple of countries to taste some delicious dishes inspired in Mexico.

Chimichurri sauce recipe!

Spring came and, along with it, the desire to start preparing delicious barbecues or “asados”. For me, a barbecue is synonymous of family and friends. Living in America and being away from home, there is always a common subconsious drive to set up a mouth-watering barbecue. I guess most immigrants share the same feelings: the typical food of our countries somehow transport us back to our affections.

To eat a good barbecue, it is necessary to accompany it with a good sauce. And -of course- the chimuchurri sauce is the star in Argentinean traditional barbecue.

It is the perfect complement to all types of meat, from short ribs, shell steak and skirt steak (some of my favorites) to any other type of meat such as chicken and fish.

This sauce has become so popular in America that is very common to find its different versions in many markets and delis. Yet, I just love the classic version.

Its color, within the range of greens, also provides a great touch to decorate the steak.

I remember vividly when my parents organized barbecues for friends and family during weekends. Of course, this chimichurri sauce was indispensable at the table.
I have the clear image of my mother making delicious salads with infinite ingredients to conform all palates. Of course, my dad made great “asados” and together formed the perfect formula.

The sauce is quite simple to prepare. The key to preparing it is adding lots of love. A phrase I have taken from an excellent cook, whom I adopted as my grandmother. She taught me many things and we cooked together many amazing dishes when I first started in the world of cooking.

And trust me; I'm sure that is true because her hands transformed any recipe into an even richer one.

Here is the classic recipe for chimichurri sauce that I like the most. I bring it to you so you can enjoy it with your favorite meat (and company!)

Ingredients

50 ml water
100 ml red wine vinegar
2 Bay leaves
¾ to 1 Tbsp crushed red pepper flakes (ají molido)
Salt and freshly ground black pepper (to taste)
6 to 7 fresh garlic, minced
2 small bunch fresh parsley, minced
1 bunch of fresh oregano, minced
100 g chopped white onion, minced
½ tsp Spanish paprika
Pinch of sugar
250 ml olive oil

1. Boil the water, vinegar, salt, pepper and bay leaf in a stain steel bowl in a deep saucepan until the salt dissolves.
2. Remove from the heat and cool it down
3. Meanwhile, mince the fresh garlic, fresh parsley, oregano and onion
4. Add the minced garlic, parsley, oregano and onion in a bowl.
5. Stir the preparation number 4 and number 1
6. Finally, add red pepper, paprika, sugar and the olive oil
7. Place in airtight container and keep it in the refrigerator

Tip: The flavor of chimichurri will certainly get better a day or two after you prepared it… so plan in advance!
